It’s a shame the gourmet’s of the world don’t unite to present an annual award to the Best Restaurant Of The Year.

I felt this shortcoming rather acutely some weeks ago when some of us gourmets – hearty eaters always refer to themselves as gourmets – were sitting around drooling on our bosoms.

The favorite indoor sport of those who enjoy good food is recalling Memorable Meals at famous eateries.

I opined that Antoine’s of New Orleans has to be ranked with the leaders because of its Steak Robespierre.

“Steak what?” demanded my incredulous companions, as learned eaters are wont to do. “Who ever heard of that dish? You’re putting us on.”

Stung to the quick of my taste buds, I asserted stoutly that Antoine’s concocted the most delectable steak this side of the Pearly Gates; and, indeed, Robespierre, was its name.

“Pooh,” they replied.

Thus it was that I set out on a quest for the recipe of Steak Robespierre.

None of our household cookbooks – already pledged to the Smithsonian Institute upon my death – had a word about Antoine’s famous steak.

Likewise the Public Library department of cookery.

Likewise the food editors of three great daily newspapers.

At last, in desperation, a long distance telephone call to Antoine’s itself.

Voila!

A conversation with the head chef.

How do mere mortals converse with men on whose shoulders rests the awesome responsibility of preparing Great Meals?

“Please, oh august one, sir, my credentials as a Master Gourmet are in jeopardy because certain neophytes have failed to make your pilgrimage and are, therefore, ignorant of the joys of Steak Robespierre.

“Would’st thou, in this extremity, deign to enlighten the miserable ones in Ohio who doubt my veracity and thy culinary skill?” Long pause at other end of wire.

“Sacre bleu!” the Great One intoned. “Eet ees a secret recipe which I have sworn to give only to my son.”

“I am desolate,” I replied. “I shall be drummed out of the Gourmet’s Club and back to pork and beans every Saturday.”

“Weeeeel, in that case, I will tell you the ingredients – but not the quantities. My son – you understand?”

“Yes, Yes, Yes! But please to proceed, my three minutes are nearly up.”

Here, then, Friends of the Sauce Pan, are the materials that go into Antoine’s unique Steak Robespierre. This is a culinary scoop in the world of food journalism – other papers may copy.

Marinate whole, aged, beef tenderloins in red wine and French dressing up to four hours. Bake to medium rare.

Next, make a small brown gravy from beef stock and arrowroot. Add these ingredients: sauteed, diced bacon; scallions; red wine; tomato juice; chicken livers sautéed in the bacon drippings; sliced green olives; mushroom caps; and finally, chunked veal sweet breads well boiled and cleaned.

Garnish with artichoke hearts marinated in olive oil, wine vinegar and dill.

For those of you who are now faint with involuntary twitchings of the stomach muscles read on at your own risk.

The proof of the pudding – that is, the steak – is in the eating so the Mother of My Children graciously agreed to prepare the dish for our doubting friends. Our friends, now eager, promised to surround it with the same viands that accompanied our first Steak Robespierre at Antoine’s, lo, those many years ago.

Oh, what a dinner it was. It will be a legend to be cherished by my children.

First there was bouillabaisse soup with great chunks of white fish, scallops, and eels. Boiled shrimp with hot tomato sauce. Salad Ponchartrain with sliced tomato marinated in red wine, topped with finely chopped and blanched asparagus tips, potato salad, Thousand Island dressing and black caviar.

Steak Robespierre, cloud light and dripping with that exquisite sauce.

“Dirty” rice steamed in beef consommé. Crackling Rose for the table wine.

For desert, my specialty, Bananas Foster, flambé.

Cafe au lait.

Bon bons and mixed roasted nuts. Panatella cigars and Southern Comfort for both ladies and gentlemen.

Well, sir, and Bob, you can imagine the effect this masterpiece had on my doubting friends. Already there is a movement afoot in my gourmet club to give me a Certificate of Appreciation, and maybe make me Grand Guard Of The Skillet.

I hope I can bear the title with modesty.

Table tennis evolved first in China and eventually moved to Europe, and then the United States. Some say “Ping-Pang” was the first name of the game because it sounded like the words spoken in the Chinese language in the 7th Century, which later evolved to “Ping Pong.” By the 8th Century, the game began to spread to India, Persia and ultimately to the West. These early games were played by hitting a dried Chinese fruit called a lichee.

Others say that the sound heard when playing ping pong on European rackets (made of pieces of paper stretched on a frame) resulted first in the nickname of “Whiff-Whaff” and later “Ping-Pong.” In Europe many people believe ping pong was invented by army officers who used rounded wine corks for balls and old cigar boxes as paddles. Ping pong remained popular as a party game for rich people in England until it officially became a competitive sport in 1927.

Eventually, the popularity of ping pong in Europe led game manufacturers to sell ping pong equipment commercially, at first under the name “Gossima.” But the name “Ping-Pong” was already widely used before English manufacturer J. Jaques & Son Ltd. formalized it in 1901. Jaques & Son eventually sold the rights of the “Ping-Pong” name to the American company Parker Brothers.

James Gibb, an English enthusiast of the game, discovered novelty celluloid balls on a trip to the U.S. in and found them to be the ideal balls for the game. In the 1950s, a plastic balls were mass produced and table tennis exploded in world wide popularity, especially in Asia, where countries like China and South Korea have produced most of the top players in the world. According to the National Sporting Goods Association, in America the majority of people played ping pong in their homes — in attics or basement recreation rooms. Table tennis attracts larger followings in China, Taiwan, Singapore, Japan, South Korea, Denmark and Germany. In comparison with sports like golf or baseball, it is inexpensive.

As ping pong’s popularity has grown, changes have been made to tournament rules to make ping pong’s rapid game play more accessible to spectators. This back-and-forth sport has a ball that travels up to 100 miles per hour. In 2000, the International Table Tennis Federation changed the official size of ping pong balls from 38 mm to 40 mm to slow the action, and games were reduced from 21 points to 11 points to make them more exciting. Players are also no longer permitted to hide the ball in their palm during service.

Ping pong played a large role in the development of arcade games and the personal computer. Atari’s Pong, a ping pong game released in 1972, was the first video game to achieve significant commercial success. Home and arcade versions of Pong helped make electronic ping pong the gaming phenomenon of the 1970s, which was a good decade for ping pong. In April, 1971, nine American ping pong players spent a week in China playing exhibition matches against the best Chinese ping pong players. This “ping pong diplomacy” paved the way for President Richard Nixon’s historic visit 10 months later.

Ping pong has since become the largest participation sport in the world, according to the International Olympic Committee, which made ping pong an official Olympic game in 1988 in Seoul. Today, over 40 million people play ping pong competitively worldwide.

Tactical Assassin 2 is a classic stickman sniper game. It isn’t a tough game to complete, but it does have a few tricky missions. If you have been playing this game for 2 hours and for the life of you cannot pass level nine, you should keep reading this article as I will walk you through on how to complete Tactical Assassin 2.

Mission 1 is an easy training mission. You are given a Winchester.308 rifle with a Tasco 4×15 scope. Your targets will popup randomly every few seconds so keep your eyes open! You must hit six of them to move on to the next mission.

Mission 2 is called “A New trust.” Your target is a militia member that assassinated 2 key allies of the organization called F.M.G. Intel confirms he is sitting at a local coffee house. Your target is the stickman on the right that is smoking a cigar. Easy money!

Mission 3 is called “Brotherhood.” Your boss likes your work and has assigned you to assassinate one of the King Brothers and the forensic specialist. Both targets are sitting on a bench in the park. Remember the code of Snipers. “One shot, one kill.” So wait for just a few seconds and when the KB stickmen sits up and both of their heads are aligned, take the shot!

Mission 4 is called “A New Lead.” Our boss is having a hard time locating the last two remaining KB members. But we do have a lead. In order to get the information, we must assassinate a doctor for reasons our source wants to remain unknown. He will be leaving his office shortly. The doctor is an easy kill.

Mission 5 is called “Full House.” We have word from the “Fox” that one of the KB brothers is hosting a poker game at his house. Your target is the stickman sitting closest to the window, back to you, drinking with his right hand.

Mission 6 is called “Airliner.” Fox has given us intel that the last remaining KB brother is staying in Iraq and about to walk out of the plane. We must eliminate him and his bodyguard. The body guard is standing underneath the wing of the plane. Wait until the KB brother walks down the stairs and infront of the bodyguard, then shoot him. After killing the bodyguard without the KB seeing you, take him out.

Mission 7 is called “Disruption.” An Iraqi forensics specialist is close on closing the case of recent bombings by the FMG. This forensics agent must be eliminated. You will be positioned on the roof of an adjacent building. Your target’s room is the middle one on the top floor. First shoot the satellite tv dish on the roof. Your target will then get up and walk through the window view giving you the opportunity to take him out.

Mission 8 is called “Last Speech.” You have been giving a powerful.50 caliber sniper rifle. Your target is a Spanish politician who is giving a speech protected by thick glass. This is your change to eliminate him.

Mission 9 is called “The Boom-man.” Boom-man is a high profile assassin in Iraq responsible for many bombings. Your mission is to distract the guards so that the Boom-man can plant bombs on the vehicle. You must not shoot anyone. Mission is quite tricky as you have a limited amount of time. First look up and notice the guard under a tree. Shoot the tree to distract him. Next, look down and to the right for a bottle near the door of the garage. Shoot it to distract the second guard. Third, look down to the right of the garage and you will notice a guard on the car and an electronics box just to the right of the garage door. Shoot the box to distract the third guard. Then watch as the Boom-man plants the bomb on the car and blows it up!

SAMMY PENN: Born Morgan City Louisiana September 15 1902. Died Florida September 18 1969.

Let’s start off a little differently this time: to me, the greatest New Orleans drummers for my pleasure were Baby Dodds, Sammy Penn and Cie Frazier. But Sammy had a wonderful second string to his bow. He sang with the same phrasing as the legendary Fats Domino, and with his big cigar and huge smile was a master entertainer.

Sammy’s first job was in 1921 with Jake Johnson’s band, then with Chris Kelly’s Brass Band, Kid Rena’s Brass Band and the legendary Eureka Brass Band. He was the mainstay of the Kid Thomas band for a quarter of a century.

You must understand that entertainment was the name of the game. With Sammy Penn and Joe “Twat” Butler, Kid Thomas Valentine had a showband. Singers, personalities and Thomas with his famous “bag of tricks” No wonder this band survived in New Orleans and then toured the world to represent the birthplace of jazz.

In a long interview with my friend Tom Stagg in his wonderful record shop “Good Rockin’” he describes Sammy Penn’s drum kit as “ultra basic” A bass drum, a snare drum, a tom-tom and a cymbal attached to the bass drum. As Tom remembers, he drove the band relentlessly and with an amazing complexity of rhythmic sounds. This kit was simple but the rhythm was anything but!

This is Tom’s recollection of the last weeks of his life. “Sammy returned from a doctor’s appointment with the news that he had very high blood pressure and heart murmurs. Sammy played at Preservation Hall that night and after another session with the Kid Thomas Band loaded their gear on to a bus outside the Hall on St. Peters Street and set off with Sammy for a tour through Georgia to Florida. After only one concert, the bus returned to the Hall with only the driver, the road manager and the body of Sammy Penn.

Talking to Barry Martyn, he rates Sammy Penn highly in great drummers from New Orleans. Sammy played 4/4 on the bass drum and not the more familiar cut time of New Orleans drummers. George Lewis preferred that 4/4 sound and Joe Watkins played that way, but without the explosive accents and complex rhythms of Sammy Penn. Barry had the good fortune to sit in with the Kid Thomas Band and found that he could not hear himself and had to adjust his volume and style to suit the band.

So Sammy Penn was the drummer for Kid Thomas and his Algiers Stompers and spent the major part of his playing life with that band. As Barry Martyn said “When Joe James and Sammy died the band would never be quite the same again”

To hear him at his best, you should listen to “Kid Thomas Valentine Creole Jazz Band on American Music AMCD 49 and “Kid Thomas and his Algiers Stompers” on Riverside OJCCD 1833-2. My great joy is actually seeing the man in action on a DVD of the December Band produced by Big Bill Bissonnette (possibly still available by contacting him on his Jazz Crusade website – jazzcrusade.com).

Sammy Penn was a one-off and we are lucky to have records to listen to. In Australia, the late great Peter Clohesy was influenced by him and in Europe both Keith Minter, Emile Martyn and Chris Marchant show signs of having listened to this “original”.

My next opus will be an interview with Les Muscutt -a superb banjo player from the U.K. who made a huge impression on the New Orleans jazz scene. Due to ill health, he retired recently and I am sure you will find his story interesting! P.S. A last minute call from Barry Martyn to say that his latest video on American Music AMVD4 will feature Kid Thomas with Sammy Penn, plus the Kid Howard band and many other good things!

C. M. Coolidge, known for his “poker playing dogs”, was a brilliant man with innovative ideas and an entrepreneurial instinct about art. Born in a small town in upstate New York to Quaker parents, he didn’t receive a formal college education, but did take some college business classes later in his life. By the time he was 18 or 19, he took a few lessons in portrait painting, along with a course in bookkeeping a few years later. His love for reading resulted in a solid self education. At the age of 19, he started doing cartoons for newspapers in surrounding neighborhoods. A few years later, while living in Rochester, NY, he wrote and illustrated a weekly newspaper column.

Coolidge loved people and was quite social. At around the age of 20 or 21, he was elected Superintendent for one of the local school districts. Later, he was elected Town Clerk. Around the same time, he became active in the Masonic Lodge. Coolidge had lofty plans for himself, although most of his pursuits didn’t work out or were short-lived. When he was 27 or 28, he started the first bank in the town of Antwerp, NY. He worked there for a short time, and then became a druggist. That; however; did not hold his interest for long. And, a year later he founded his hometown’s first newspaper. Unfortunately, that failed a short time later.

Between jobs and in his free time, he would draw cartoons for area newspapers and would do caricatures of people. One of his many elaborate projects was the writing of a comic opera concerning the elimination of mosquitoes. Interestingly, it was produced but made no real money. He also applied for a patent for collecting fares on street cars. Although, again, nothing became of it.

The one consistent endeavor he held onto was his love of comics and art. He began to do dog paintings around the turn of the century. Mainly, they were purchased by cigar companies and used as giveaways. Coolidge’s big break came when the advertising firm Brown & Bigelow approached him to do a series of paintings that would be used on calendars and other memorabilia. That was in 1903. Around this time is when his infamous poker dog paintings got underway.

Over the next ten years, Coolidge created 16 paintings of dogs – seven that portrayed dogs playing pool. The other nine were dogs surrounding a poker table. By putting dogs in art, yet in a situation familiar to middle class Americans, he not only anthropomorphized them, but created an instant kitsch fad. It certainly helped the cigar and calendar businesses for which he worked. A few of his original dog paintings sold for US$2,000 to US$10,000 dollars’ which was an astonishing amount for the time period.

For years his images of dogs playing poker while drinking, smoking, and basically getting into trouble graced bachelor pads, bars, and taverns around the country. The scenes always evoked feelings of something American and something modern. Recently, a pair of his poker dog paintings entitled A Bold Bluff and Waterloo, expected to go for US$30,000 to US$60,000, surprised the art world by selling for $590,00 for the pair.

More meaning for A Friend In Need:

A few theories about his art give more meaning than what initially meets the eye. One theory states that the painting A Friend In Need has great significance. “Coolidge’s painting was used in the Second World War to boost the moral of Dutch citizens. The dog with the cigar being Churchill giving America help (on his left hand side), which goes unnoticed. Russia (the most left dog) tries to attract USA’s attention, while Hitler (the dog with the pipe and the ‘big ears’ in front of the clock) watches anxiously.”

Poker enthusiast Jim McManus has stated, “[In] A Friend in Need, the blatant cheating refers back to the early nineteenth century, Mississippi riverboat days, when poker was mainly a series of opportunities to fleece the suckers.”

A specialist for Sotheby’s Auction House, Alison Cooney, says that people who dismiss the painting as simply “kitsch art” are missing the deeper meaning of his work. “It’s a humorous, ironic take;’ she continues, a jab at middle-class America; another way of poking fun at ourselves.”

Another theory suggests that the dogs were all aspects of C.M. Coolidge himself. Known to his friends as “Cash”, he loved a good bet and was something of a hustler. He wore a hat and often held a cigar, just as his paintings of dogs did. Other sources hint that he looked like the bulldogs he painted.

In a recent tongue-in-cheek article by Steven J. Rolfes, he writes “In this iconic work, we see a masterly representation of the Last Supper, with Christ (on the left) sitting conveying His wisdom to His followers. We see Judas to His right, with the bag of silver coins at his pawside.” He asserts that the painting A Friend in Need has deep arcane roots in a very secret society that even precedes the Illuminati called the “Prior of Dogbone.”

This important insight is one that Coolidge himself would appreciate.

After his success with painting dogs, a new idea provided him a profitable income. He started the invention of “Comic Foregrounds”, which are wooden life-size cartoon stand-ups with the face cut out so that one can place their head for funny photos. He completed hundreds of them, including the famous Man Riding a Donkey and Fat Man in a Bathing Suit. Some of these comic foregrounds had hand lettering at the bottom. He would often hire students to do them.

C.M. Coolidge was a bachelor for most of his life. When he was 64, he met Gertrude Kimmel, an art student who was doing some lettering work for him at the time. They were married in 1909 and had a daughter a year later.

A few years later, when Coolidge was about 70 years old, he fell and hurt his knee. According to an account written by his daughter Marcella Coolidge, he didn’t visit a doctor and was lame the rest of his life. He tried his hand at writing, but it didn’t take off. Still, Coolidge remained in good spirits. His wife went to work and he was strong enough to do work around the house.

Coolidge’s daughter has also said that his dog paintings were not taken seriously at home by herself or her mother. She said that she never liked them – that it was simply commercial. We often collect seashells along the shoreline, either to simply admire them, or, in lots of cases, we just gather them up, as we like the texture of them. Not just this, I am sure that your friends and family will think that this is, in fact, delightful. They will also be hoping that you will make one for them in the not too distant future. However, now you have tried this, you could basically do this to other items, such as wooden picture frames or even around mirrors!
